Chicken with Olives

Basic chicken with olive recipes I threw together during my pre-tri weight loss weeks.

2 tbsp flour

2 tbsp olive oil

2 large chicken breasts

juice of half a lemon, plus the rest of it sliced

1/2 cup mixed olives

chopped parsley

about 1 tbsp butter

salt and pepper

Heat oil in pan. Cut chicken breasts in half and pound thin. Dredge in flour. Brown on each side (about three minutes).

Add lemon juice, slices, olive, garlic and half the parsley and pan and cook for about eight minutes.

Finish sauce with butter. Top chicken breasts with olive mixture and garnish with remaining parsley.
