Roasted Sunchokes with Herbs

Sunchokes were another random farmers market find that I prepared rather simply.

3 sunchokes, sliced into small pieces

olive oil

4 sprigs thyme, chopped

1 large sprig rosemary, chopped

Preheat oven to 475. Toss sunchokes with oil and herbs.

Roast 35 minutes, tossing once, or until cooked.
