Lobster mushrooms were a random find at the farmer’s market. They worked well in a steak sauce here.
2 filets sirloin
olive oil
salt and pepper
1/2 giant lobster mushroom, sliced
1/2 onion, sliced
1 tbsp flour
about half a can of beef broth
splash vermouth
1 tbsp butter
Preheat oven to 475.
Heat oil in pan. Add onions and cook down about 15 minutes. Add mushrooms and cook another 5-10 minutes. Remove from pan.
Add a little more oil to pan. Sear steak for about a minute per side. Remove from pan and add to oven and cook about 10-12 minutes (I put the steaks on the same pan where I was roasting some fish).
Add mushrooms and onions back to pan. Add flour and cook a minute. Deglaze with vermouth. Add beef broth and bring to a boil. Turn down and simmer for a few minutes. Add in a pat of butter.
Serve sauce over sliced steak.
