Turkey Meatballs for a Crowd

These are one of my favorite things to bring to someone who could use a freezer/fridge meal (new mothers, family members grieving, etc.). This recipe is pretty similar, but I’ve streamlined it a bit so it’s easy to double or even triple for a crowd.

For the meatballs:

1 pound ground turkey

1/4 cup panko bread crumbs

1-2 tbsp milk

1 egg, lightly beaten

salt and pepper, to taste

1 garlic clove, minced

1 tbsp Italian seasoning  (I like Penzey’s tuscan sunset)

For the sauce:

2 cloves garlic, minced

1 tbsp olive oil

1 onion, chopped

1 tbsp tomato paste

1 splash wine (optional)

1 can crushed tomatoes

salt and peper, to taste

1-2 tbsp fresh basil, chopped, to finish

To make: Preheat oven to 350 degrees.

Combine milk and bread crumbs and allow to sit for five minutes. Add egg and remaining meatball ingredients. Mix well and fashion into meatballs (I usually get 14-15 per per batch). Bake, ideally on a rimmed baking sheet, for 30-35 minutes.

While meatballs are baking, heat oil in pan. Sautee onion and garlic until soft. Add tomato paste and cook for a minute. Add wine, if using, and cook another minute. Add tomatoes, season sauce with salt and pepper. Simmer while meatballs are cooking.

When meatballs are cooked through, dump sauce and meatballs together in a disposable pan and sprinkle with basil. Can be refrigerated or frozen. Bring with a package of pasta over to a friend’s.
