John winged this chili recipe last night and we both thought it was quite good.
4-6 Cloves Garlic
1 Red Pepper
1 Green Pepper
1 Can Diced Chilis
1 Can Kidney Beans
1 Can Black Beans
1 lb Ground Beef
1 lb Chorizo (Salvadoran)
1 Big can tomatoes
Add diced garlic, little bit of onions.
Add rest of onions, diced peppers.
Cook for a bit.
Season (Chili Powder, Cumin, Paprika, Taco Seasoning, Oregano, cayenne pepper, etc).
Add Japanese dipping sauce (soy, mirin, sugar) that was left over.
Stir to form paste/ rough on veggies.
Add half beer / deglaze.
Remove Chorizo from casing, mix with beef.
Add salt and Chili powder.
Add meat (and a little oil) to pan.
Add veggies, tomatoes, beer, beans, can o’ chilis, mix.
Reduce to simmer, cook covered for X times.
Remove lid, add flour tsp – tbsp flour if watery.
Cook down / lid off for 5-15.
Server over rice.
Garnish with cheese and/or green onions.
