Basic Bison Meatballs

Another let’s-just-see-how-this-meat-behaves recipe.

I really liked the texture of these. I added a tablespoon of olive oil to these with the thought it would add a little fat to the situation, and I think it was a good call.

We served these with both marinara sauce and pesto sauce for my family’s pre-race pasta party.


1 pound ground bison

1 egg, lightly beaten

1/3 cup or so panko bread crumbs

salt and pepper

1 tbsp milk

1 tbsp olive oil

Combine bread crumbs, egg, and milk. Let stand five minutes. Add meat, salt, pepper, and oil. Mix together until combined. Form into meatballs.

Bake at 350 degrees for about 35 minutes. Serve with sauce of choice.
