Ramp Butter

Got sucked into buying ramps at the farmers market with all the hipsters a couple of weeks ago.

This is a great way to use them because it lasts a long time and just a little bit of this butter really packs a ton of flavor. I put this on asparagus tonight and plan to use some for some radish crostini this weekend to bring to a party.

1 bunch ramps

2 sticks butter, unsalted, softened

salt 

zest of one lemon

two garlic cloves, minced

Bring a pot of water to a boil. Drop in ramps and blanch for 30 seconds to a minute. Remove and let cool.

Combine all ingredients in a food processor (including salt to taste). Dump out on some parchment paper. Wrap into a log and store in the freezer or fridge.
