Nam Prik

A friend of mine gave me the idea of pairing these microwaveable pork rinds with nam prik as an Asian appetizer. The first time I tried to make the sauce, I didn’t love it – the second time, this new recipe worked great.

1 tomato
2 tbsp lime juice
pinch of salt
2 tablespoons fish sauce
1 teaspoon minced garlic
¼ teaspoon minced hot fresh chile (I used jalapeno, and maybe even a bit less than that because it was a really strong pepper)
2 teaspoons sugar
¼ cup chopped fresh basil
1 tablespoon minced dried shrimp (optional – I didn’t have any so omitted)

Halve tomato and seed. Grate tomato into bowl. Add remaining ingredients and season to taste. Serve with pork rinds.
