I loved this dish that I made up on the spot. I bought a little pack of cooked langostino meat from Wegmans as my “treat” and decided to kind of riff on a lobster roll with it. Delicious and easy.
cooked langostino meat (I think it was a pack of like 5 0z)
2 tsp or so mayonnaise
1 tbsp chopped chives
1 tbsp finely chopped celery
zest from half a lemon
1 potato roll
Toss together seafood, mayo, chives, celery, and lemon (add a little salt if you like). Let sit.
Split roll. Melt a little butter in a pan and toast roll on both sides. Serve salad in roll.
