Crab Balls

These basically were mini crab cakes, and they were quite good. I just improvised them.

1 cup crab meat (lump is best here – I used claw which was fine but not ideal)
1/3 cup panko, plus a bit more for dusting
1 tbsp mayo
1 tsp Dijon mustard
zest from 1 lemon
2 green onions, sliced
Old Bay, to taste
olive oil, for pan-frying

Combine all ingredients in a bowl. Shape into tiny bowls. Refrigerate at least a half hour to solidify.

Preheat broiler. Roll balls in a bit more panko to give them a crust. Heat oil in pan. Brown on all sides. Broil five minutes or until cooked through.
