Clean-Out-the-Fridge Tortilla Soup with Pressure Cooker Chicken and Broth

This just turned out so delicious — I hope I can recreate it since this was very much thrown together with what I had on hand.


6 cups chicken broth (I made this in the pressure cooker)
1-1.5 cups shredded chicken, white and dark (ditto)
1 onion, chopped
2 garlic cloves, chopped
1/2 green pepper, chopped
2 ripening banana peppers (mine were turning orange), chopped
1/2 cup restaurant-style salsa (I had leftover homemade)
1 tbsp cumin
1 tbsp chili powder
salt and pepper
1 to 1.5 cups cooked white rice
1 jalapeno, sliced (optional; I forgot to put this in)
1 tomato, chopped
1 tbsp olive oil

For garnish:
chopped avocado
shredded pepper jack cheese
chopped scallions
chopped cilantro
lime (also left this out by accident)
sliced radishes
tortilla strips

Heat oil in pot or Dutch oven. Sautee onion, garlic, and peppers until soft. Stir in tomato, salsa, spices, rice, chicken, and broth. Simmer for 10 minutes until ingredients are heated through. Serve topped with garnishes.
