Vietnamese Rice Noodle Salad

I’ve been making variations on this for years so surprised I don’t have a recipe listed. This is basically what I did.


For the salad:
1 package vermicelli rice noodles
1 cucumber, sliced thin
1 carrot, sliced thin
chopped cilantro
chopped mint
chopped scallion
chopped peanut
fried shallots

For the sauce:
3 tablespoons lime juice
3 tablespoons fish sauce (substitute with soy to make vegetarian)
2 ½ tablespoons light brown sugar
½ cup water
1/2 a jalapeno, minced

Combine sauce ingredients and set aside.

Soak noodles about five minutes. Drop into boiling water until cooked (just a few minutes. Drain and rinse well.

Toss noodles together with sauce (you may not need it all) and remaining ingredients and serve.
