These were really good! Invented these as a breakfast take on meatballs for the project. I used chicken sausage to cut back a bit on greasiness, which I think was the right call. Was toasting the breadcrumbs necessary? Unclear, but that was my idea to add a “toast” component to the mix.
1/2 tbsp butter
1/3 cup plain bread crumbs
1 egg, lightly beaten
5-6 pieces center cut bacon
1 pound chicken breakfast sausage (I used the Trader Joe’s kind), casings removed
1 tsp salt
maple syrup, for serving (optional)
Melt butter in pan. Toast breadcrumbs for a few minutes until golden. Cook bacon (I just did mine in the microwave so I didn’t have another hands-on thing to do).
Preheat oven to 400. Combine bread crumbs, eggs, crumbled bacon, salt, and chicken sausage in bowl. Form into about 18 small meatballs.
Bake for 20 minutes or until cooked through. Serve with syrup if desired.
