I am surprised I never put this on the site before, though admittedly there isn’t much to it. I sometimes add chicken and make this a meal – other times, I just make the vegetables as a side dish.
4 chicken breast cutlets, pounded thin
light dusting flour
salt and pepper
1 tbsp butter
1 small head broccoli, cut into florets
1-2 red or yellow bell peppers, cut into slices
1 tsp olive oil
Penzey’s Creamy Peppercorn seasoning
splash or two chicken broth
If making with chicken, melt butter in pan. Season chicken with salt, a bit of peppercorn seasoning, and pepper; just chicken with flour. Cook chicken, turning at least once, until cooked through. Set aside and keep warm.
Add oil to pan. Add peppers and broccoli and stir fry one minute. Season with peppercorn seasoning, add chicken broth. Cook until crisp tender. Top chicken with seasoned vegetables.
