This isn’t really a recipe but I was pretty excited I made this, technique-wise!
2 tbsp or so dashi (I used instant)
1 splash soy sauce
1 tsp or so coconut oil
Beat eggs with dashi and soy. Heat coconut oil in pan on medium low.
Pour egg mixture into pan. Wait until almost completely set. Using chopsticks, starting at one end of the omelet, roll a tiny bit of omelet on top of each other, continuing to roll continuously to the end. Remove omelet roll from pan and slice into segments.
