Chicken Meatballs Paprikash

These were ok. I don’t feel like I got the sauce exactly right, even if I made it similar to John’s paprikash recipe.


For the meatballs:
1/3 cup bread crumbs
1 tbsp milk
salt and pepper, to taste
1 tsp paprika
1 egg
1 pound ground chicken
1 tbsp fresh parsley
dash or two of garlic powder

For the sauce:
1 tbsp each sweet, sharp, and smoked paprika
sour cream (almost a container’s worth)
1 onion, chopped into pieces
2 cloves garlic, minced
1 cup light sour cream
1/2 cup chicken broth
splash Worcestershire sauce
1 tbsp butter
Handful whole peppercorns

Combine meatball ingredients and roll into balls. Set aside.

Preheat oven to 350.

Melt butter in pan. Sweat onions. Combine remaining ingredients and let simmer to become a thick sauce. Pour into shallow pan and add meatballs. Bake 25 minutes. Serve over egg noodles and garnished with additional parsley, if desired.
