Salmon with Grapefruit Lemon Butter Sauce

I told you I was going to work grapefruit into another salmon recipe. Didn’t get a photo of this one but improvised it last night and we were very happy with it. Served with potato cauliflower puree and broccoli.

8-10 oz salmon
1 tbsp olive oil
salt and pepper
1 tbsp butter
1/2 cup or so chicken broth
juice of half a lemon
juice of a quarter or less of a grapefruit
salt and pepper
1 tbsp chopped shallots
spoonful of flour
chopped parsley

Heat oil in pan. Sear salmon, skin side down, for four minutes. Flip and sear another 4 minutes or to desired temperature. Remove from pan, wipe clean.

Melt butter in pan. Sautee shallots until soft. Sprinkle flour over onions and cook a minute. Add citrus and chicken broth. Season to taste. Garnish with parsley.
