Getting down to the last couple of meatballs! These were a riff on a shrimp burger recipe I’ve made before (and I served these as sliders).
1 pound uncooked shrimp, defrosted and shelled
1 slice soft white bread, torn into small pieces
2 scallions, chopped
3 tsp light mayo (I used kewpie mayo)
2 tbsp chopped fresh parsley
salt and pepper
zest of one lemon
dash cayenne pepper
Preheat oven to 425.
Pulse bread in food processor. Pulse shrimp for 7 pulses.
Combine remaining ingredients in a bowl. Add shrimp and bread to bowl and combine.
Fashion into about nine small meatballs. Bake for 15 minutes or until shrimp is cooked and opaque. Serve as sliders, if desired (I like the Martin’s potato roll “party rolls” for super small sliders).
