Asian Short Ribs (Pressure Cooker)

Another pressure cooker cookbook hit! I halved this recipe and it still turned out really well. Ideally boneless ribs are the choice here, but I could only find bone-in.

1 tbsp vegetable oil
2 garlic cloves,
1 1 inch piece ginger
1/4 cup hoisin suace
1 tbsp soy sauce
1 tbsp dry sherry
2 scallions, chopped
dash cayenne
24 oz short ribs, ideally boneless
1 tbsp cilantro

Cook oil/garlic/ginger about a minte. Add hoisin, soy sauce, scallion whites, sherry, beef and cayenne. Cook over high pressure for 35 minutes. Strain sauce off and let sit in the fridge a few hours. Skim off fat. Add sauce and beef back to pressure cooker on sautee function and garish with cilantro and greens.
