Cauliflower Rice or Broccoli Rice

This is my second or third time making cauliflower rice and probably my most basic rendition. I used this recipe for inspiration and paired it with these kebabs (using shrimp instead of chicken). Terrific meal during my low carb week.

UPDATE: You can also make this with broccoli and it’s arguably even better.

Slow Cooker Beef Daube

A nice Cooking Light recipe, and an excuse to try out the slow cooker function on my Instant Pot (worked perfectly for this). I saw two different recipes for this in the CL archives – I used the ingredients from┬áthis one, but the cooking instructions (5 hours on high) from the other.

Totally got Midnight Diner-tastic up in here! This is the recipe they make in the first episode (no noodles for the mysterious cab driver). It’s basically a pork and vegetable stir fry ramen with a very basic broth. I mostly based this off of this video.
