Nikujaga

A hit from the Japanese cooking challenge. Simple, a little sweet, very homey. From my cookbook “Tokyo Cult Recipes.” If we made it again, we’d use shaved beef.

1 onion
10 small yellow potatoes, peeled and halved
2 tbsp sesame oil
7-8 oz sliced or shaved beef
12.5 fl oz dashi
2.5 tbsp soy sauce
2.5 tbsp mirin
2.5 tbsp sake
2 tbsp raw sugar
1 tbsp toasted sesame seeds

Slice onion. Heat oil in pan. Add meat a slice at a time and sautee a minute or two. Add potatoes and onion and sautee a minute or two. Mix liquids and sugar in a bowl, then pour into pan. Bring to a boil, cover, and simmer 10 minutes. Remove lid and cook another 15 minutes. sprinkle with sesame seeds.
