Totally got Midnight Diner-tastic up in here! This is the recipe they make in the first episode (no noodles for the mysterious cab driver). It’s basically a pork and vegetable stir fry ramen with a very basic broth. I mostly based this off of this video.

 pork belly (I had about eight pieces frozen left over from another recipe)
mushrooms (I used one large bunch of wild mushrooms, chopped)
about 1 cup chopped cabbage
1 large leek, chopped
1/2 block tofu, cubed
salt, to taste
3 cups chicken broth
1 cup water
1 heaping tbsp miso paste
2 servings fresh ramen noodles
1 tbsp vegetable oil

Heat oil in pan (in another pot, bring some water to a boil). Stir fry vegetables for two minutes (season with salt). Set aside.

Stir fry pork belly until fat is almost rendered. Add vegetables back to pan.

If water is boiling, cook noodles about 3 minutes. Reserve a bit of water and pour into each noodle boil to heat. Drain.

Pour broth and water into pan with vegetables and pork. Bring to a simmer. As you simmer, add miso paste and stir in. Check seasonings. Add tofu and heat through.

Top cooked noodles with broth/meat/vegetable mixture and serve.
