This is my second or third time making cauliflower rice and probably my most basic rendition. I used this recipe for inspiration and paired it with these kebabs (using shrimp instead of chicken). Terrific meal during my low carb week.
UPDATE: You can also make this with broccoli and it’s arguably even better.
A small head of cauliflower, chopped coarsely
1 small onion, chopped finely
2 tablespoons of butter
1-2 tablespoons of coconut oil
salt and pepper
Pulse cauliflower in food processor. Add 1 tbsp butter and 1 tbsp coconut oil to pan. Cook onion until soft. Add cauliflower and stir fry a minute or two. Cover and cook 5-10 minutes. Season with salt, pepper, and seasoned salt.
