To go with our Indian feast, I adapted this cocktail recipe into a punch and it was really terrific. There is some estimating here, so keep that in mind.
1 cup spicy simple syrup (recipe below)
1 cup lime juice
3-3.5 cups gin
3-4 cups seltzer
1/2 to 1 cucumber, passed through a food processor
For the syrup:
2 cups water
1 cup sugar
1 serrano pepper, cut in a few pieces
Make syrup: simmer all ingredients until sugar is dissolved. Strain. Let sit with pepper still inside until ready to make cocktail.
In punch bowl, combine cocktail ingredients and a ring of ice. Add more seltzer if needed. To dress mine up, I made an ice ring with lime slices and cilantro in it.
