Why yes, I do still make new meatball recipes. I thought these would have a bit more flavor, but my friends liked them well enough, and it’s an interesting recipe.
¼ ounce dried shiitake mushrooms, soaked in water for at least 30 minutes
½ pound shrimp, peeled and deveined
1 pound ground pork
2 scallions, finely chopped
¼ cup cilantro, minced
1 tablespoon coconut aminos
½ teaspoon Diamond Crystal brand kosher salt
½ teaspoon fish sauce
¼ teaspoon ground white pepper
¼ teaspoon sesame oil
1 scallion, chopped for garnishing
Chop up mushrooms, squeezing out water. Combine all ingredients except garnish scallion (I also added a little salt). Shape into balls (I made 16). Bake at 400 for 20-25 minutes or until cooked through.
