Veal with Morels Sauce

I wish I would have immediately written this down because it was so good. This should be a relatively close approximation.


1/2 pound veal flank steak
chopped parsley
about a dozen morels, soaked to remove grit
1-2 tbsp butter
about 2 tbsp cream
splash or two chicken broth
squeeze lemon juice
1 shallot, sliced

Heat cast iron skillet. Sear veal steak on both sides (seasoned with salt and pepper) and cook to desired doneness. Slice against the grain.

While steak is cooking, heat butter in pan. Sautee morels and mushrooms until soft. Stir in cream and broth and simmer to thicken. Check seasonings and add lemon juice. Serve steak with sauce.
