One of my favorite homemade pizza recipes to date. Omit the chicken, and this would still be a nice vegetarian pizza recipe.
1/2 batch basic pizza dough (I made my white pizza with the other half)
1 chicken thigh, cut into small pieces
1 tbsp olive oil
salt and pepper
red pepper flakes
1/2 leek (white parts only), cut into rings)
about 2 tbsp ramp pesto
fresh mozzarella, torn into small pieces (enough to scatter across the pie)
shredded part-skim mozzarella (enough to fill in the blank spots where the fresh isn’t)
Heat 1/2 of your oil in pan. Sautee leeks 15-20 minutes, until a little caramelized. Remove from pan.
Add the remaining oil to pan. Toss chicken with salt, pepper, and red pepper flakes. Cook through and set aside.
Preheat oven to 450.
Roll out dough. Spread a thin layer of pesto on the dough. Layer mozzarellas to cover pizza. Top with leeks and chicken.
Cook about 15 minutes or until crust is golden and cheese is browned and melty.
