I made this when my friend Amy came over for dinner and we liked it a lot. It’s basically a Peruvian beef stir fry (John orders it frequently) with french fries mixed in. Loosely based off of this recipe with variation.
1 lb flank steak, sliced against the grain
2 garlic cloves, minced
Pepper to taste
3 tablespoons vegetable oil
1 small red onion cut in thick slices
1 tomato, sliced
1 red pepper, sliced
1 green pepper, sliced
1 jalapeno, sliced
2 tablespoons soy sauce
3 tablespoons red wine vinegar
1/3 cup beef stock
1/2 -cup fresh cilantro, coarsely chopped
1 russet potato, prepared as French fries (do as you like; I went the oven fries route)
White rice, for serving
Prepare your French fries and start cooking your white rice.
Stir fry meat until browned – remove from pan. Stir fry vegetables until just tender – remove from pan. Add vegetables and beef back to pan with soy sauce, vinegar and beef stock. Simmer a couple of minutes. Fold in French fries and heat through. Garnish with cilantro and serve over white rice.
