Pork and Asparagus Stir Fry

We liked this simple recipe from Nom Nom Paleo. I adapted it just slightly and served over cauliflower rice.

1 pound asparagus, cut into small pieces
2 tablespoons coconut oil
1 large shallot, finely chopped
salt
4 garlic cloves, minced
1 pound ground pork
2 jalapenos, sliced
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons fish sauce
1 teaspoon toasted sesame oil
2 scallions, trimmed and thinly sliced
fresh basil, chopped, to taste

Heat 1 tbsp coconut oil in work. Brown pork in wok. Drain and bring back to pan.

If needed, add additional oil to pan. Add vegetables and sautee one minute. Add soy sauce, rice vinegar, fish sauce and sesame oil and cook until veggies are tender. Garnish with scallion and basil.
