Asian-ish Tomatoes and Cukes

I had tomatoes and cucumbers to use up, so I decided to put a slightly Asian spin on my usual treatment of the veggies to go with our curry. We were surprised by how much we liked the change.


One cup tomatoes (cherry tomatoes halved, larger tomatoes cut into small pieces)
One cup cucumber, cubed
salt and pepper
2 tsp sesame oil
1.5 tbsp or so seasoned rice vinegar

Season tomatoes and cukes with salt and pepper. Let stand 10 minutes. Drain.

Toss vegetables with oil and vinegar and serve.
