Hot Pot for One

I made this quite awhile back, but noticed I’d never put it on the site when rifling through my database of ideas for the Japanese cooking challenge. Amended! Another one from Just One Cookbook that’s inspired by Midnight Diner. Already having dashi made makes for a very quick meal.

2 cups dashi
2 leaves napa cabbage
4 slices pork belly
1 inch medium firm tofu
¼ pkg enoki mushrooms
2 tsp sake

To Serve:
Ponzu
Togarashi

Prep your vegetables. Bring dashi and sake to a simmer. Add vegetables and meat to hot pot. Simmer five minutes. Serve with ponzu and togorashi.
