1 green onion/scallion
8 oz sliced shitakes
½ cup dashi (1/2 cup = 120 ml)
1 Tbsp sake
2 Tbsp mirin
1 Tbsp granulated sugar
2 Tbsp soy sauce
¾ lb thinly sliced beef (or shaved, ideally)
2 Tbsp pickled red ginger
2 poached eggs
Cut the onion into thinly slices and chop the green onion. Set aside.
Combine dashi, sake, sugar, mirin and soy sauce and bring to boil. Add onions and mushrooms, cover and cook until tender.
Add the beef and cook until no longer pink.
Serve the meat and sauce over steamed rice. Top with scallions, ginger, and egg.
