What a treat! I don’t normally splurge on cooked lobster meat, but got sucked in at the farmer’s market today.
8 oz cooked lobster meat
2 hot dog buns (ideally split top, but we didn’t have on hand)
1 tsp chopped chives
1 tsp chopped tarragon
1 tsp chopped parsley
about 1.5 tbsp olive oil mayo (eyeball it – meat should be just moist)
1 small piece celery, chopped fine
zest of one lemon
dash of paprika
salt and pepper
juice from half a lemon
butter lettuce leaves
Preheat broiler. Spray buns with cooking spray. Lightly toast under broiler. Spread with butter.
In bowl, combine mayo, herbs, celery, lemon zest and juice, salt and pepper. Fold in lobster.
Line hot dog buns with lettuce. Divide lobster mixture between hot dog buns. Dust with paprika and serve.
