Barely a recipe but a refreshing salad for a summer cookout. Easy to double for a crowd. I also made these peanut noodles but since I wasn’t 100 percent sold on the texture I’m considering that a recipe in progress and not posting.
1 medium zucchini
1 medium yellow squash
1/2 cup thinly sliced radishes
2 tablespoons chopped fresh dill
2 tablespoons Champagne vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Using a vegetable peeler, shave zucchini and yellow squash into strips (about 1 cup zucchini and 1 cup yellow squash).
Combine zucchini, squash, radishes, and remaining ingredients in a bowl; toss gently to coat. Serve immediately.
