Pork Hambagu Steak

Another Japanese recipe for the challenge. I followed this recipe as a guide (a new one since I made this dish before) but used all pork because that’s what I had on hand. So good!

½ onion
1 Tbsp vegetable oil
salt and pepper
¾ lb ground beef & pork combination (I used all pork here)
1 large egg
2 Tbsp milk
⅓ cup panko (Japanese breadcrumbs)
½ tsp nutmeg
1 Tbsp vegetable oil
¼ cup red wine
Sauce:
1 Tbsp unsalted butter
3 Tbsp red wine
3 Tbsp water
3 Tbsp ketchup
3 Tbsp tonkatsu sauce

Chop onion finely and sautee until soft. Allow to cool. Mix onion with meat, an egg, milk, Panko, salt, black pepper, and nutmeg. Mix thoroughly and form into patties. Add a thumbprint to each patty. Refrigerate for 30 minutes.

Heat oil in pan. Cook on one side for five minutes. Flip, add red wine and cook additional five minutes. Remove lid and cook through (most liquid will be evaporated). Remove burgers and add sauce ingredients to pan. Simmer until thick and pour over steaks. Serve with rice.
