Low Carb January, Year 3

This is the third time we’ve done low carb January. I tend to lose 8-10 pounds each time we do this, and this year was no exception (though I gained a few back in Houston last week, grr). Here are the recipes we prepared this time around – a mix of old and new. I do adapted low carb: I allow myself fruit, beans, some alcohol consumption, and a few mini-cheats (light breading on meat, etc.).

Almond Chicken Satay
Flip Steak with salad and asparagus
Magic Mushroom chicken thighs with veggies
Greek Turkey Burgers (with salad – I also skipped the tapanade)
Salt and Pepper pork chops (with cauli rice and snap peas)
Spaghetti Squash Scampi
Chicken Cashew Lettuce Cups
Hoagie Salad
John’s Fajita Chicken (basically this sans tortillas)
Tire Patches with veggies
Cumin Lamb and cauliflower rice
Bacon Mushroom Swiss Burgers (this patty with those toppings/no bun) and salad
Salmon poke with stir-fried veggies
Ground Meat Mixture with mashed cauliflower
Italian Chicken Zoodles
Smitten Kitchen meatballs parmesan w/ salad
Low Carb Turkey Tacos (basically ground turkey seasoned with Penzey’s chicken taco seasoning, plus toppings, wrapped in lettuce)
John’s Pork and Black-Eyed Pea Chili
Veal Marsala
Spicy Chicken Kebabs
London Broil with Asparagus
Japanese MaPo Tofu and Cauli Rice
Instant Pot Chicken and Gravy (recipe to come)
City Chicken (adapted for the pressure cooker)

Beyond dinner: Shrimp scramble, Southwestern scramble, Egg drop soup
