Madras Chicken Salad

I made this with the remaining cooked chicken from my pho ga.


1/4 cup mayo
1/2 tsp curry
salt and pepper
1/2 an apple, sliced into cubes
juice from about 1/4 of a lime
half cup chopped cilantro
1 scallion, chopped
1/8 cup toasted almonds
1/2 pound chicken (mix of white and dark), cubed

Mix mayo, curry, salt and pepper. Squeeze lime over apple and toss. Fold all ingredients together.
