Broiled Kielbasa

Not really a recipe, but this works for the Frederick Family Food challenge so worth noting. We always had kielbasa for breakfast on Easter, often with a kougan from Mrs. Blackburn or some other accompaniment. It’s still one of my favorite things to have for breakfast.

Pressure Cooker Mongolian Beef

I was a little skeptical that this needed to be a pressure cooker recipe but it did turn out quite tender. I made a couple of adjustments (mostly cutting the sugar down).

Detroit-Style Pizza

Gotta say, this is one of the best things I’ve made. So good! I’ve been obsessed with Detroit-style pizza since visiting the city last year. My mom got me the pan for Christmas and I finally got to use it!

Dad’s Fried Fish and Pierogis

Another Lenten meal. Dad usually used this method to fry walleye, but the closest I could get around here was flounder (I thought this turned out really well). We always just bought pierogi vs making from scratch (these ones I got at a local Polish market). Growing up, I remember usually having them boiled, but for holidays we have been pan-searing them after in recent years.

Lighter Hainanese Chicken Rice

I really liked this dish the first time I made it, so figured I’d try Cooking Light’s lighter version. Really tasty, though just as time-consuming to make, really. We loved this hot sauce and would use it in other preparations, too. Warning, this makes a ton.

Instant Pot Roman-Style Lamb

Huge hit for Easter! Would make again. I only got a photo of our whole spread versus the individual dish, but also see polenta (recipe to follow), a spring salad (that was just ok so I don’t know that I’m going to post; did like the dressing, though) and this barely-a-recipe snap peas dish.
