A solid Cooking Light recipe, though I had to tinker with it a bit. John was more into it than I was.

There’s no real recipe here, but I need to log this meal for the challenge. Spaghetti and meatballs was another family dinner, using frozen meatballs and Ragu sauce. We often served this with garlic toast made on Italian bread.
Dad’s Ringo Chicken is a quirky one, combining chicken, overly-concentrated Lipton soup, and frozen stir fry veggies, served over chow mein noodles. Falls into the category John has described as “Boy Scout cooking” (not a pejorative). I still crave this when I’m sick.
I make scrambled eggs more often than not. My go-to technique right now: scramble eggs ahead of time with salt, let set ten minutes before cooking (got this technique from The Food Lab), cook in a little bit of ghee. But I’ve been digging these two add-ins lately: Everything Bagel seasoning and leftover pimento cheese. The former is pictured here with some toast with the same seasoning and cream cheese.
Just a note that using Everything Bagel seasoning in lieu of salt in this soft pretzel recipe yields delicious results.
I picked up a cauliflower pizza crust from Wegman’s to see if we liked it enough to eat when we’re avoiding carbs. It was quite good! I think it works better with white pizzas than it would with tomato sauce ones, though.
