I was super happy with how this Whole30 adaptation of John’s meatloaf (a staple in our house – I make it, too) turned out.
I just kind of improvised this dish and we were really happy with how it turned out.
This isn’t too different from how I normally prepare this, but it turned out well enough that I am noting what I did this time.
This year’s recipe challenge will be…soups of the world! I’ll be making at least 52 different iconic and/or interesting soup recipes from various regions/countries/cultures. They have to be new-to-me recipes, though it’s ok if I’ve made another version before.
I can’t do as many of these as I’d like during Whole30, but I kicked things off with a compliant egg drop soup recipe.
