Paleo Swedish Meatballs + Mash

I’d put this recipe into the “just ok” category. The gravy didn’t quite come together as much as I’d liked, and the meatballs were on the cusp of falling apart. Still tasty, though. I subbed in half cauliflower in the mash.

Mexican Cauliflower Rice

This cauliflower rice adaptation was a big hit. We served this with fajitas (fajita salad for John and me) and fruit for a little dinner party. I made this with two bags of frozen rice and adjusted other ingredient portions accordingly.

Instant Pot Potatoes

Egg Drop Soup and This Year’s Challenge

This year’s recipe challenge will be…soups of the world! I’ll be making at least 52 different iconic and/or interesting soup recipes from various regions/countries/cultures. They have to be new-to-me recipes, though it’s ok if I’ve made another version before.

I can’t do as many of these as I’d like during Whole30, but I kicked things off with a compliant egg drop soup recipe.
