Chicken Pesto Cauilflower Gnocchi

Like half of the internet, I succumbed to the Trader Joe’s cauliflower gnocchi craze. I really do enjoy it (it may help that I’m not one to make traditional gnocchi at home, so it tastes more like a treat).

2-3 boneless chicken thighs
1-2 tbsp olive oil
several tbsp pesto
a bit of mozzarella cheese
1 bag Trader Joe’s cauliflower gnocchi
salt/pepper/red pepper flakes

1 tbsp ghee

Heat oil in pan. Cut chicken into pieces. Season with salt/pepper/red pepper flakes and cook through. Remove from pan.

Microwave TJ’s gnocchi for three minutes. Heat ghee in pan. Sautee gnocchi (make sure to leave undisturbed for 1-2 minutes without flipping) for 4-5 minutes. Add back in chicken with pesto. Stir fry together to meld flavors. Remove from heat, stir a little cheese in and serve.
