Tomato Soup with Grilled Cheese Croutons

It was nice to work a tomato soup into the challenge. This one was a little heavy on the orzo (and the grilled cheese croutons were cute but not as satisfying as a sandwich), but it was still a nice winter dinner.

Wild Rice Casserole

This is one of those classic Internet recipe blunders where someone changes a main ingredient and gasp! the recipe doesn’t really work right. But I’m noting this because I do want to make this recipe the original way at some point. Basically, I somehow burned the wild rice I was making for this, so I had to sub in white rice instead. I felt like the rice turned out a little gluey and it wasn’t saved by the casserole.

Spinach Tortellini En Brodo

This soup was actually pretty terrific, though I recommend cooking the pasta separately. If you store the tortellini in the broth, it gets soggy.
