It was another clean-out-the-fridge night, as I’m trying to avoid grocery shopping before payday. I knew I had two leftover chicken thighs , half a package of kielbasa and canned tomatoes (turns out I was wrong about that one). I figured some sort of jambalaya-type thing would do the trick.

This is pretty much how my mom used to make baked chicken. She did it with split bone-in chicken breasts, but you can also use boneless depending on what you have on hand. The picture below is actually boneless chicken thighs, served with tator tots and paprika-scented peas.
I’m not the best at making fish. This is a quick-fix recipe I used once for a salmon filet.
This is a Rachael Ray recipe I made once and was soooo tasty. Has a stroganoff-like taste, with a bit of a more luxurious feel.
If I post every clean-out-the-fridge pasta or stir fry I ever make, my blog will be…well, considerably longer. But I was really pleased with how these flavors melded together.
This is one of my favorite summer recipes. The thighs are great the next day in salads or sandwiches. These could also be done in the broiler if you don’t have a grill.
