This is an eggplant parm recipe that is A) on the lighter side and B) on the easier side. I know there are more involved ways to make the dish, but I enjoy this simplified version.

My friend Becky and I were semi-regulars at a restaurant in the Hamptons called Papa D’s that had a two-for-one pasta night during the week. They made a dish I really loved – it was soooo simple but yummy. I’ve recreated a fairly close version at home in the past, though it’s never quite the same.
I recommended George make this dish for a date recently and it turned out really well. It’s impressive looking without being expensive or labor intensive.
Haven’t made this one in awhile, but I remember it being a winner.
This recipe was born out of the time when I always ate dinner at Underwood after fencing and liked to occasionally bring food myself. It’s also a great way to highlight good sausage from the butcher, like the one at Eastern Market.
I used to make this recipe for Jerry a lot – he liked it because it reminded him of the boy scouts. It’s a fun little meal-in-a-packet, though the veggies come out a little mushy for my taste.
