The Letter N

This was a fun letter, during which I made:

*An improvised Mexican-ish steak salad with Nopales and Napa cabbage

*Katsu sandos with Napa cabbage

*White chicken chili with Navy beans

*More Napa cabbage in chow mein

*Roasted new potatoes 

*Another improvised spin on zuppa toscana with navy beans

The Letter G

Lots of fun stuff during this letter:

*Beef with Chinese broccoli (gai lan), plus garlic and ginger

*A basic gigante bean dish with canned beans, a little broth, garlic and rosemary

*Negamaki with green onions

*A chicken and green bean stir fry (and more garlic and ginger), no real recipe using Nom Nom’s stir fry sauce

*The golden beet cake

*Tom kha with galangal

*Roast golden beets (alongside some turkey meatloaf)

*A hoagie salad featuring garbanzo beans

*A ginger steak salad with garlic, greens, green pepper, and green onion

Golden Beet Cake

I never make cakes, so I was particularly impressed with myself on this one. So good! I’m including the full recipe; here but I actually made this Smitten cream cheese frosting instead bc it was easier.

Pistachio Mortadella Sandwich

A friend mentioned this to me as a use for my focaccia, and it was super tasty. I already had pesto so just incorporated some chopped pistachios for texture.

Another Saltimbocca

A different spin on saltimbocca: I think I like a saucier style but it was a nice change. I did veal instead of chicken, which was slightly greasy with the cheese.
