Baked Taquitos

These taquitos from Skinnytaste were a hit. I was originally going to make them according to the recipe and use shrimp, but I had leftover cooked chicken so decided at the last minute to substitute chicken (and only make 2/3 of the recipe).

Crab Dip

We had an awesome time down at the beach. One of our meals involved delicious Maryland crabs, and I picked the leftovers clean so we could make crab dip the next night. It was absolutely delicious. I used this as a guide with a couple adaptations.

Crawfish Bisque

This is my first time making a true bisque where you thicken with rice, grind the actual shells in, etc. It was an adventure! My first round blending and straining resulted in bisque that tasted like…shell. But I had made it ahead, so I blended again for a good 5-8 minutes while finishing up the salad we had for dinner and it definitely improved the consistency. A fun dish to make, prompted by my finding crawfish in the freezer section of my fish market. I followed this recipe’s crawfish variation but halved it.
