Thai Chicken Meatballs with Peanut Sauce

Another meatball on the books! This one was quite good. I used this recipe for inspiration with some adaptations. We served with a Thai cuke salad and white rice.

For the meatballs
1 pound ground pork
1 tbsp chopped cilantro
1 tsp chopped garlic
⅛ cup fish sauce
1 tbsp chopped scallions
1 egg, beaten

Peanut sauce
1 tbsp vegetable oil
1 tbsp cilantro, chopped
1 tsp garlic
1 tsp ginger paste
⅛ cup fish sauce
2 heaping tbsp peanut butter
2 pinches red pepper flakes
1 tbsp brown sugar
½ cup coconut milk
1 tbsp soy sauce
juice from 1 lime

Preheat oven to 400.

Combine meatball ingredients and fashion into small meatballs.

Heat up a cast iron skillet – spray with cooking spray. Sear meatballs on each side. Put in oven and cook about 20 minutes or until cooked through.

While meatballs are cooking, combine peanut sauce ingredients in blender. Check for seasonings.

Top meatballs with peanut sauce.
